Prosecco is to sparkling wine what rose is to still. It’s hot – damn hot. There’s no particular reason for it. The wine itself is a fairly basic, fresh and fruity sparkling that trades on its Italian origins to get away with a cheap production process and affordable prices. However prosecco has also established itself with drinkers looking for a stepping stone to more traditional sparklings.
